My Mid-life Crisis At 35

I was feeling restless, despite a wonderful husband and three beautiful children. A 15-year career in commercial real estate was no longer appealing. We decided to have one more baby, and I stayed home for the first two years with her while finishing a college degree and volunteering for three organizations. But I still felt restless.

When my oldest daughter was diagnosed with 49 food intolerances, my life was turned upside down. My spare time revolved around sourcing out new recipes to accommodate her dietary requirements. Restaurants that do not use wheat, soy or dairy in their preparation are few and far between. After 3 months and a lot of research, I finally started to get the hang of it, but it was time-consuming to say the least, and my energy was waning.

That's when I decided to get tested as well, and was shocked to discover I had 92 intolerances myself. I felt numb. Absolutely everything in our house had to be made from scratch, and going out for breakfast, lunch, or dinner as a family simply wasn't an option anymore.

Once on board to our new eating style, my family started to feel like new people. My daughter's digestive issues stablized. I lost 18 pounds in 8 weeks without exercising, and both the fatigue and painful cramps I felt after every meal disappeared. My husband's energy level went through the roof and his inflammation subsided, ending his painful sciatica episodes and debilitating joint pain. These life-changing improvements inspired me to teach others how to make healthful food choices. I wanted everyone to feel this good!

Armed with months of researching why eating well is integral for optimal digestive health, the concept of INSIDE OUT was born; an option for the busy worker or family that wants a prepared meal or dessert without wheat or dairy, and does not contain any refined sugar, corn syrup, processed ingredients or hydrogenated oils.
